You’ll learn how to make a cookie dough with lots of nuggets and a smooth chocolate brownies dough and then combine the two and cover them with a chocolate frosting! So, are you tempted? Brookies recipe

 

A mixture of cookies and chocolate brownies, crispy and soft at the same time.

 

Ingredients (for 12 pieces)

 

For step 1

Cane sugar: 150 g

Wheat flour: 180 g

Sweet butter: 100 g

Dark chocolate chip(s): 50 g

Fleur de sel: 1 pinch(s)

Egg(s): 1

 

Baking powder: 7 g

 

For step 2

Egg(s): 3

Powdered sugar: 150 g

Dark chocolate: 170 g

Sweet butter: 125 g

Wheat flour: 90 g

Walnut kernel(s): 50 g

 

For icing

Sweet butter: 75 g

Dark chocolate: 75 g

Icing sugar: 75 g

1/2 skimmed milk: 3 cl

 

Description and steps to follow

 

The chef’s plus advice:  “You can make individual portions by baking brookies in muffin cups.”

 

For the cookie dough

Sift flour and baking powder.

Cream the butter, the sugar and the salt in a food processor or by hand. Add the eggs, mix and add the flour and yeast to obtain a homogeneous dough. Add chocolate chips at the end. Set the dough aside.

 

For the brownies

Melt butter and chocolate in a double boiler. Beat the eggs with the sugar until they form a white foam. Then stir in the melted chocolate and flour, mixing gently. Add the walnut kernels and set aside.

 

Further steps

Preheat the oven to 180°.

Butter a square pan.

Place brownies batter in bottom and cover with cookie batter.

Bake for 30 to 35 minutes. The dough will still be soft when it comes out of the oven.

Let cool and cut into squares.

For chocolate icing

Sift icing sugar to remove lumps.

Place all ingredients in a salad bowl and cook in a double boiler without mixing too much. Once the chocolate and butter have melted, remove the preparation from the heat and mix.

Temper slightly before freezing.

Place brookies on a rack and cover with frosting using a ladle.

For dressage

Serve with a scoop of vanilla ice cream for even more delicacy.
