Recipe n°3: Chicken and Pumpkin Pie Recipe
This recipe, which consists of a chicken and pumpkin pie, is a perfect idea for any cold day. It goes with mashed vegetables on top and a delicious filling of poultry and vegetables, prepared in a healthy way. Just try the recipe and see for yourself.
Ingredients
- 150 grams of skinless, fat-free chicken breasts, cut into small cubes
- Half an onion
- Half a pepper
- A piece of scallion
- Half a carrot
- A spoonful of mustard
- A dash of soy sauce
- Vegetable spray
- Salt, pepper and herbs
Preparation
Start browning the diced chicken in a skillet or saucepan sprayed with vegetable spray. Once the chicken is cooked, add the onion, pepper, scallion and carrot. All properly chopped, of course.
Cook until vegetables begin to loosen and add soy sauce. When everything is almost cooked, add the spoonful of mustard and stir well.
Turn off the heat, add salt and pepper, and add some freshly chopped herbs: thyme and sage will do you more than good, for example.
Now, let’s put the cake together. In an oven dish, place the chicken filling on the base and the pumpkin puree on top, which you will have ready by then. The base of this easy, dough-free chicken pie is ready for you.
If you like, you can add a mixture of a tablespoon of breadcrumbs and a tablespoon of sesame seeds on top for gratin. This way, you will have a perfect winter dish ready to enjoy with the whole family, which will devour it without concessions despite being light.
